Southwest Chicken Skillet

Guess what I did last night? I cooked dinner! That’s a rarity in our house now a days. Between work, illness and cheer there is very little time and even less energy to make dinner at the end of the day.

Thankfully I came up with something quick and filling that I can throw together in 20 minutes. This Southwest Chicken Skillet combines rotisserie chicken with pinto beans, bell peppers and corn for a quick weeknight meal. You can top it with salsa, guacamole, sour cream and extra cheese. It can be served over rice, with tortilla chips or as a low-carb, stand alone meal.

I chose to top my mine with guacamole and scoop it into tortilla chips. These may be the healthiest nachos even eaten in ages, and I have zero guilt about it. Everyone is fed, and I even got them to eat some extra veggies.

SOUTHWEST CHICKEN SKILLET

INGREDIENTS

  • 1 tablespoon extra-virgin olive oil
  • 1 small onion, chopped
  • 1 bell pepper, chopped (I used a pretty orange one)
  • 2 cloves garlic, minced
  • 1 (14 oz.) can pinto beans, rinsed and drained
  • 1 small can corn, well drained
  • 3 cups cooked chicken, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lime juice
  • 1/2 cup shredded Mexican cheese

Optional Toppings: Guacamole, Sour Cream, Salsa, Cilantro or chopped tomatoes

DIRECTIONS

  1. Heat a large saute pan over medium heat. Add olive oil then the onion and peppers. Saute for 4-5 minutes, until softened. Then add the garlic and saute for another 30 seconds or so, until fragrant.
  2. Add the pinto beans, corn and chicken to the pan. Add all of the seasonings (chili powder through black pepper). Stir to combine and let everything warm through for 2-3 minutes.
  3. Add the lime juice and turn off the heat. Sprinkle shredded cheese over the top of the meal. Cover the pain for 2 minutes and let the cheese melt.
  4. Serve over rice or with tortilla chips and enjoy.
