So I was brainstorming a new series to replace the daily affirmations and thought I would lighten the mood with a game of Would You Rather. Now I don’t want to do a fear factor edition, and Mardi Gras skipped my mind. Instead I decided to go with a St Patrick’s Day Theme. I will also share one of my favorite Irish recipes to go with each question.
Question 1: Would you rather lumpy potatoes or lumps in your gravy?

I don’t know about you, but I’d rather have lumpy potatoes than lumps in my gravy. At least the potato lumps should taste like potato, while gravy lumps tend to be unincorporated flour, which is gross.
Champ Potatoes
Ingredients
- 4 large russet potatoes, peeled and quartered
- 1/4 cup 2% milk
- 6 green onions, chopped; green parts only
- 1/2 cup unsalted butter
- salt and pepper to taste
Directions
- Add sliced green onions to milk and bring to a boil at low heat. Take off the heat and let the green onions infuse the milk.
- Boil the peeled and quartered potatoes in salted water until very tender. Drain the potatoes and let them steam dry for 2-3 minutes. Pour in hot milk with the onions and mash well. Add butter, salt and pepper to taste.
Champ Potatoes are fluffy and get a pop of flavor from green onions and lots of butter. They make a great weeknight side dish because they complement any main course. Leftovers are easily reheated with a little extra milk, or fried in butter.
