    Pumpkin Pistachio Bread

    I’ve finally done it. I’ve given in to my basic girl tendencies and busted out the pumpkin pie spice. Of course I didn’t use it in the expected way. Instead of making a sweet dessert, I made a semi-savory bread to serve along side my White Chicken Chili.

    The savoriness comes from the pistachio add in. It’s composed of brown butter, crushed pistachios with sea salt, turmeric, cumin and cayenne. I know it sounds weird, but don’t knock it until you try it.

    The batter came together pretty quickly. First I cut the butter and sugar together. Then I added the eggs. I slowly added the pumpkin spice and flour 1/2 cup at a time. Once combined I folded in the pistachio mixture and created this beautiful batter, that tastes pretty good too. I know, don’t eat raw eggs. 🤷‍♀️

    The bread baked in 2 loaf pans for 60 minutes at 350-degrees F. I checked for doneness with a toothpick. Then I cooked the bread on a wire rack.

    I find that I enjoy this bread best warm with a little bit of butter spread on it. It’s just the right amount of savory and sweet, and oh so yummy to eat.

    Pumpkin Pistachio Bread

    Ingredients

    For Pistachio Add-Ins

    • 3 TBSP butter
    • 1 cup chopped, shelled pistachios with sea salt
    • 1/2 tsp ground turmeric
    • 1/2 tsp ground cumin
    • 1/4 tsp cayenne pepper

    For Bread Batter

    • 2/3 cup butter at room temperature
    • 2 2/3 cups granulated sugar
    • 4 large eggs at room temperature
    • 1 (15 oz) can pumpkin
    • 2/3 cup water
    • 3 1/2 cups self-rising flour
    • 1 tsp pumpkin pie spice

    Directions

    1. Preheat the oven to 350-degrees F. Grease two 9” x 5” bread pans, and set aside.
    2. In a small saucepan, melt 3 TBSP butter over MEDIUM heat. Continue cooking until golden brown, stirring constantly for 5 minutes. It should very an amber color and smell slightly nutty when complete.
    3. Remove the saucepan from the heat. Stir in the pistachios, turmeric, cumin and cayenne. Set aside to cool.
    4. In a large bowl, beat 2/3 cup butter and sugar until crumbly. Do not cream it!
    5. Add the eggs 1 at a time, using a hand mixture to beat each one in thoroughly.
    6. Then beat in the pumpkin, water and pumpkin spice until well combined.
    7. Beat the flour into the batter, 1/2 cup at a time on low speed until just moistened.
    8. Finally, fold the pistachio mixture into the batter with a rubber spatula.
    9. Divide the batter into the prepared loaf pans.
    10. Bake in the preheated oven for 60 minutes, or until the center of a toothpick comes out clean when inserted into the center of the loaf.
    11. Allow the bread to cool in the pans for 10 minutes. Transfer to a wire rack to finish cooling.

    Makes 2 loaves.

    I normally stink at making bread, but this recipe was super easy and turned out perfect. I will definitely make this again for Thanksgiving, as an alternative to regular dinner rolls.

    After 10 years together and 7 years married, I’m lucky to be able to say that I have no issues with my sex life. It is frequent, spontaneous and fulfilling. I started reading the Let’s Get It On series by Amber Cole, because I thought it might give me some ideas to surprise my husband with.

    The premise of Sweaty Mess Sex Games is that a good sex life takes work and effort. It reminds the reader that good sex starts with having a good connection with your partner. When you connect, you create desire and have fun.

    For me the only barrier to sex games is my insecurity about discussing sex with my husband. It’s nothing to do with him. My ex did a number on me. Whenever I think about creating a fantasy, I remember the time I tied myself up with a Christmas bow expecting sex under the tree, and instead he just laughed and went to play video games.

    I found that the majority of ideas in this book were variations of things my husband and I already do together. If you are in a rut or feeling unimaginative, this would be a good book. If you’re looking for some more spice in an already fulfilling relationship, visit an adult store together. I think it will add more spark.

    I know. I know. It’s fall, which means warm soups and comfort foods. Ice cream and milkshakes belong to summer. This is my husband’s fault though. He’s the one who found cinnamon ice cream at the grocery store.

    I decided it would pair nicely with some apple cider and a little milk to make fall shakes. Of course I added some Apple Pie Spice for a little extra punch.

    Then I poured the shakes into fun Halloween cups. I topped them with whipped cream and spiced donuts.

    They were a hit with the pajama party girls.

    Apple Cider Milkshakes

    Ingredients

    • 2 cups cinnamon ice cream (vanilla would work as well)
    • 1 cup apple cider
    • 1/4 cup milk of your choice
    • 1/2 tsp Apple Pie Spice
    • Whipped cream
    • Small spice donuts

    Directions

    1. Place ice cream, cider, milk and apple pie spice in a blender. Pulse 20 times until ingredients are combined.
    2. Pour into small cups and top with whipped cream. Put one or two donuts on each straw and serve.

    Makes 2 small shakes or 1 large one.

    Please ignore the mess and focus on the yummy treats in cute, festive cups. They really are worth the splurge.

  • Apple Pie Spice Makes It Nice

    Yeah, I’m the bad guy over here still yelling the blasphemy the “Pumpkin Spice is not the only flavor of fall!!” Have you walked down the spice aisle at your grocery store and grabbed a container of Apple Pie Spice yet?

    This is my go seasoning for the season. I sprinkle it into my tea. I obviously use it for apple pies. I even put it into my waffle batter last night for breakfast for dinner.

    And That’s Three…

    My mom has always said that bad things come in three. I feel that in my soul this week.

    Sunday I said goodbye to my old girl. She was over 14 years old and lived a really good life. Cancer came on fast. It was the right decision but I’m still sad.

    Monday evening my Uncle Wayne passed after a long battle with cancer at 94 years old. He was a larger than life personality. He played a mean game of pinochle. More than anything else, he loved my Aunt Mary Jane and treated her with kindness and respect at all times.

    Then earlier today the lab at my doctor’s office sent a report with number three. I am on day 41 of my female cycle. I took a pregnancy test that showed a very faint second line. Unfortunately, my blood test does not show the HCG levels raising properly, so no baby.

    At 45 my chances of conceiving naturally and successfully are less than 5%. I know that the hope for another baby was a little selfish, because I have healthy children already. Knowing and feeling are two different things though. I’m feeling sad and lost and broken.

    Maybe this is why perimenopause has such a high correlation of depression. How is a woman supposed to navigate the changes happening to her body when she can’t even make an appointment to see her doctor without jumping through hoops?
